Materials (36 triangles):
12 thawed filo sheets
Light cooking spray (or about 80 grams of melted butter/margarine)
To fill:
Tabor Goat Cheese 5% Zuriel Farm
150 grams of grated yellow cheese (one and a half cups)
1 medium green onion
Salt (carefully), pepper
How to prepare?
1. Start by filling:
• Soak the green onions in soapy water for 3 minutes, rinse and dry. Slice into rings.
• Place the cheese block, yellow cheese, green onion and spices in a food processor, and process until the mixture is smooth and relatively dry.
2. Preheat oven to medium-high heat (200 degrees C).
3. Carefully place a sheet of filo on a work surface (cover the sheets you are not working with with a damp kitchen towel to prevent drying out), and spray its surface with a light oil spray or brush with butter. Place another sheet on top and grease. Place a third sheet and grease. Place a fourth sheet and grease.
4. Slice the leaf formed from the 4 layers into 12 equal squares. Spread each leaf with a teaspoon of the mixture, fold into a triangle, and glue the edges with a little water. Grease the tops of the triangles with spray or butter.
Process the remaining filo sheets into triangles in the same way. Bake the triangles as quickly as possible to prevent them from drying out. While waiting for them to bake, cover them with a damp kitchen towel.
5. Bake in a preheated oven for 10 minutes until the triangles are golden brown. Remove and serve hot.
The triangles are excellent frozen, after which they should be heated before serving.
