A meal in one plate • The king of winter soups: hummus soup with meat

There's nothing like a warm bowl of soup on a cold winter day • Meir Rosenberg, head chef at Rimonim Gali Kinneret Hotel, provides a recipe for a warming and nutritious hummus soup, in honor of the winter days

Materials:

250 grams dried chickpeas

250 grams of meat number 8 or 10 (unprocessed)

1 carrot, diced

1 chopped onion

1/2 cup chopped celery.

2 cloves of garlic, chopped

1 tablespoon of Dacef soup powder

1/2 teaspoon salt

1/4 teaspoon black pepper

4 tablespoons oil

10 cups of water

 Preparation method:

1. Soak the hummus for 24 hours, rinse and cook until 3/4 soft in 4 cups of water.

2. Cut the meat into 1 cm cubes and sauté them in two tablespoons of oil, add the 6 cups of water and cook over low heat.

3. Sauté the carrots, onion, celery, and garlic in 2 tablespoons of oil and, when the meat is tender, add the vegetables and cooked chickpeas until the meat and vegetables are tender.

4. Add the spices and cook for a few more minutes.
