Ingredients:
80 g brown sugar - 1/3 cup sugar 80 g white sugar - 1/3 cup sugar 320 g honey - 3/4 cup 120 g eggs - 2 eggs 190 g oil - 1 cup 350 g gluten-free flour (tami for cakes) - 2.5 cups flour 7 g baking powder - 2 teaspoons 2 g baking soda - half a teaspoon 1/4 teaspoon salt 1 teaspoon cinnamon A pinch of nutmeg 450 g peeled and diced apples - 4 medium apples 200 g prepared tea - 1 cup tea
How to prepare:
Preheat oven to 165 degrees. Line an English cake pan with baking paper (in the case of a disposable pan, this is not necessary). Beat sugar, honey and eggs in a mixer with a whisk until you get an airy mixture, add the oil slowly until incorporated and a uniform mixture is obtained. In a bowl, mix all the dry ingredients and add to the mixture. Once the mixture is smooth, add the tea until you get a uniform texture. Take the apple cubes, it is recommended to mix them with a little flour before adding to the batter. (This action prevents the apples from sinking in the cake). And mix in a wrapping motion. Pour the mixture into the pan. You can add sliced almonds or nuts on top. Bake for about 35-40 minutes until the toothpick comes out dry. It is recommended to close the cake (after it has cooled) in a bag and wait at least a day before eating, the cake only gets better. • These days, the Biga Coffee chain is launching a classic honey apple cake – gluten-free, in a traditional style that combines touches of spices, including: cinnamon, cloves and nutmeg.
