Chef Avi Levy presents a recipe for a festive fish dish: oven-roasted trout with vegetables

Difficulty level: Easy | Preparation time: 40 minutes | Recipe for 6 diners

Ingredients for preparing the fish:

• 1 family trout, open to the book
• 1 red beet, peeled and cut into quarters
• 1 fennel, cut into quarters
• 2 carrots cut in half
• 1 head of garlic, cut in half
• 1 kohlrabi, cut into quarters
• Olive oil
• Pepper and salt
• 1 whole lemon

How to prepare:

• First, dry the fish as much as possible, then spread the fish with olive oil on both sides.
• Place the fish in a baking dish for the oven, and sprinkle salt and pepper on both sides.
• Season all the vegetables except the red beets with olive oil, salt and pepper, mix together and sprinkle in the baking dish around the fish.
• Repeat the process with the beets, so that they do not color the other vegetables.
• Bake on a grill at a high temperature of 200 degrees, for 15 minutes, until the vegetables and fish are nicely golden brown.
