
4 medium zucchini
300 grams of ground beef
1 tablespoon olive oil
Half a cup of chopped onion
2 cloves garlic, chopped
1 cup tomato paste
A quarter teaspoon of salt + a quarter teaspoon of pepper
1 cup grated Parmesan Fur
1. Slice the zucchini. Remove the insides with a spoon, set aside. Place on a tray and season with salt, black pepper and a drizzle of olive oil.
2. Heat the olive oil in a medium-sized pot and fry the onions until they become translucent.
3. Add the garlic and cook for another 2 minutes.
4. Add in the minced meat and cook for another five minutes until lightly browned.
5. Add the tomato puree to the zucchini boat. Season the zucchini with salt and black pepper and cook for 10 minutes.
6. Fill the zucchini with the meat mixture.
7. Add the Parmesan and cook for 20 minutes.
