300 grams rye flour
700 grams bread flour
20 grams fresh yeast
700 grams of water
10 grams of salt
Option - up to 200 grams of toppings, such as: sunflower seeds, pumpkin seeds, nuts
• Preheat oven to 230 degrees.
• In the mixer bowl, mix the flours, fresh yeast, and water.
• Knead for about 10 minutes until you get a flexible, sticky, and slightly liquid dough.
• If you chose to add the nuts and seeds at this time, put them in the mixer along with the dough for another minute.
• Divide the dough and place in a greased bread pan, to rise for at least an hour.
• After rising, brush with egg and bake.
• This type of bread is baked with moisture (put a bowl of water in the bottom of the oven) for 20 minutes, remove the bowl of water and continue baking for 15 minutes.
• Then remove the bread from the pan and bake without a pan for 10 minutes.
• Total baking time 45 minutes
• Chill for at least an hour before serving.
