Special starter: Liver pate is a kind of liver spread from French cuisine, and it is different from chopped liver, both in texture and taste. I chose to serve it in ice cream cups, both because of the interest and surprise - and because the combination is really appropriate: the delicate sweetness and crispness of the cup go great with the feta.

Ingredients:

For:

500 g roasted chicken liver (fresh liver that you roasted yourself is best, if you buy roasted, it is better to keep it as fresh as possible)

2 onions, fried until lightly golden brown

30 g Naturina (a relatively healthy margarine) with a neutral flavor

2 tablespoons dry red wine

A little salt and pepper

To serve:

Ice cream cones (they are crispy and relatively thick), fur of course

High-quality jam of raspberries/berries/blueberries, etc.

Chives/green onions, finely chopped

How to prepare:

Grind the wig ingredients in a food processor into a smooth puree.

For a beautiful presentation:

• Sprinkle finely chopped chives/green onions on the serving plate.

• Fill ice cream cups with a wig

• Arrange ice cream cones and mounds of confiture on the plate.
