
Chef Israel Kreuzer teaches how to prepare a dish that is truly suitable as a 'main' dish for the holidays. A recipe that is particularly indulgent on the one hand, and on the other, relatively easy to prepare.
A 2-pound piece of beef suitable for long cooking (I used Denver)
For the marinade:
1/2 cup olive oil
A heaping tablespoon of grainy Dijon mustard
A spoonful of honey
3 chopped rosemary sprigs
3 sprigs of chopped thyme
A teaspoon of coarse salt
A teaspoon of black pepper
• Mix the marinade ingredients well.
• Soak the piece in the marinade for a few hours.
• Preheat oven to 180 degrees.
• Wrap the piece in baking paper and top it with foil.
• Place on a baking sheet.
• Place in the oven for 3-4 hours.
• After 3 hours, check to see if the piece is soft - a knife inserted into the meat comes out easily. If not, continue cooking for another hour and check.
• After the piece has softened, let it cool and slice into thin slices.
• When serving, warm with the sauce that formed while cooking.
• Serve with roasted potatoes
