Preparation instructions:

Prepare the mayonnaise sauce in advance, grind all the sauce ingredients in a food processor and store in the refrigerator until serving.

Place each potato between 2 Chinese chopsticks and slice - the chopsticks prevent the potato from being cut all the way through, creating a fan. Repeat with the remaining potatoes.

Place the potatoes on a baking sheet lined with baking paper, spraying each potato well between the slices with oil spray.

Sprinkle with the spices and bake at 180 degrees for about an hour.

When the potatoes are ready and still warm, pour the mayonnaise sauce over them and serve hot.
