• 70 g chopped parsley
• 250 g chopped white onion
• 50 g bread crumbs
• 2 eggs
• 5 g black pepper
• 10 g fine salt. .
Mix all ingredients well. Place in the refrigerator to set and roll each patty into 40 grams.
Then sear the meatballs on both sides in a pan with canola oil. Transfer them to a pot with the pepper sauce.

• 200 ml canola oil
• 10 grams cumin
• 20 grams Moroccan paprika
• 10 g sugar
• 20 g fine salt
• 50 g soup powder
• 2 pcs dried sweet pepper
• 20 g sliced hot green pepper
• 150 g coarsely sliced garlic cloves
• 100 g tomato paste
• 2.200 liters of water
• 75 grams chopped fresh coriander
• 1.700 kilos of sliced red pepper
Preparation method:
Heat a pot with 100 ml of canola oil, add the peppers and cook for about 10 minutes, add the hot pepper, then add the garlic and cook for another 6 minutes. Add the puree, mix and cook for about 2 minutes.
At the same time, mix an additional 100 ml of oil with the cumin, paprika, salt, soup powder and sugar.
Add the spices, including the dried peppers, to the pot with the water, and add half the amount of cilantro, cover, and cook for half an hour.
At the end of cooking, add the remaining coriander and adjust the flavors if necessary.
