Eggplant cream
Ingredients: medium eggplant, 2 tablespoons lemon juice, 1.5 tablespoons mayonnaise, 1 tablespoon sugar, 2 cloves garlic, salt.
How to prepare:
Roast/grill a medium eggplant in the oven, cut into 2 and put the eggplant contents in a food processor, add lemon juice, garlic, mayonnaise, salt, sugar and process into a smooth puree.
Eggplant in pickle and roasted sesame seeds
Ingredients: medium eggplant, deep frying oil, half a tablespoon of paprika, 1.5 tablespoons of vinegar, 1/5 tablespoon of sugar, 3 tablespoons of oil, 2 tablespoons of water, a little salt, black pepper, a flat tablespoon of cumin, 2 crushed garlic cloves and 2 tablespoons of sesame seeds.
How to prepare:
Cut the eggplant into cubes and salt it. After 20 minutes, drain the liquid and fry in deep oil. In the meantime, prepare and mix all the sauce ingredients and pour over all the fried eggplants while they are still hot. Then, toast the sesame seeds in a pan over low heat and mix with the eggplants.
Eggplant with greens and coriander
Ingredients: medium eggplant, 3 tablespoons sweet chili sauce, half a tablespoon ketchup, 2 crushed garlic cloves, a bunch of cilantro and a little salt
How to prepare:
Cut the eggplant into cubes, salt, absorb the liquid and deep fry in oil. In the meantime, mix the sauce ingredients and pour over the eggplant, add chopped cilantro and mix gently and carefully so as not to crush the eggplant.
Romanian-style eggplant
Ingredients: medium eggplant, charred/roasted, large gamba, charred over the fire, 1/4 cup oil, 2 tablespoons vinegar, salt and a green onion stalk.
How to prepare:
Mash the eggplant with a fork, add vinegar and salt and mix. Add the oil slowly, stirring quickly without stopping until all the oil is absorbed and the eggplant lightens its color slightly. Add the green onion and the bell pepper, peeled and diced, add and mix.
