Sautéed vegetables with goat cheese

Materials:

 2 zucchini, diced

4 peppers of different colors, diced

 1 large onion, diced

 2 stalks of chopped green onion

 80 g goat cheese

Tomato paste

Half a cup of boiling water

Sweet chili

Sugar, salt and pepper

Canola oil for frying

How to prepare:

  1. Fry the vegetable cubes in a pan, you can add more types according to taste (and availability).
  2. Meanwhile, in a bowl, place tomato paste, half a cup of boiling water, and to taste: chili, salt, pepper, and sugar. Mix well, pour over the vegetables in the pan, and continue stirring. Towards the end of frying, add small pieces of cheese and stir gently.
  3. It is best served immediately, with fresh bread or pita.
  4. If you want to give it an extra twist, you can add a beaten egg to the frying before the cheese, mix with the vegetables, and then add the cheese.
