In preparation for Passover, the Italian brand Barilla offers a creative recipe for kosher lasagna for Passover: a rich combination of roasted vegetables and melting cheeses that create a particularly festive family dish.

  • Gluten-free lasagna packaging, kosher for Passover, from Barilla
  • 2 jars of Barilla basil sauce (kosher for Passover)
  • 350 grams grated mozzarella cheese
  • Large eggplant, diced
  • Medium red pepper, chopped
  • 250 grams chopped mushrooms
  • 1–2 cloves of garlic, chopped
  • 2–4 teaspoons olive oil
  • Salt and pepper to taste
  • Grated pecorino cheese
  • For decoration: basil leaves

How to prepare:

Salt the eggplant cubes to reduce the liquid. Heat olive oil in a pan, add garlic and then the eggplant, mushrooms and pepper. Fry until lightly browned, add the barilla sauce and cook for a few minutes until reduced.

Assembling the lasagna:

In a baking dish, place a layer of sauce and vegetables, top with lasagna sheets, a layer of mozzarella - and repeat the process until the dish is filled. Finish by sprinkling pecorino cheese.

Bake in an oven preheated to 180 degrees until the cheese is bubbling.

Garnish with basil leaves and serve.
