Chef Avi Biton presents a recipe for a meal full of protein: noodle salad and tuna cutlets

There are dishes that manage to combine homemade, fresh, and simple food with touches of creativity and surprising flavors.

Chef Avi Biton shares a recipe for making noodle and meatball salad. This is as part of a collaboration with the Rio Mara brand, who together created a delicious, easy-to-prepare dish, suitable for a home meal or impressive hospitality.

This is a salad that combines noodles and colorful vegetables with peanut butter and soy sauce, plus crispy tuna cutlets - a dish full of protein and rich Asian flavors.

Ingredients for the salad:

½ package egg noodles, cooked according to manufacturer's instructions

1 bunch chopped cilantro

 ¼ medium purple cabbage, thinly sliced

1 medium carrot, peeled and cut into matchsticks

1 bunch chopped green onions

 1 medium red chili pepper, chopped

Ingredients for the sauce:

• 2 tablespoons smooth peanut butter
• 1 tablespoon soy sauce
• 1 tablespoon rice vinegar or lemon juice
• 1 teaspoon sesame oil
• 1 teaspoon brown sugar (or honey/maple)
• 1 clove garlic, crushed or ½ teaspoon garlic powder
• 1 teaspoon ginger root (optional)
• 1 teaspoon sweet chili sauce or a little Sriracha for spiciness
• 2–4 tablespoons hot water, as needed for dilution

Ingredients for tuna patties:
• Rio Bitter Tuna in Olive Oil, 2 cans of 160 grams (unfiltered)
• 1 egg (size M)
• 5 tablespoons bread crumbs

Preparation method:

Prepare the sauce: Blend the sauce ingredients in a stick blender.
Prepare the salad: Place all the salad ingredients in a bowl, pour the dressing over it and mix.
Prepare the tuna balls: Mix all the ingredients for the balls in a bowl, form small balls and deep fry in oil.
Place the salad in a slightly deep plate and arrange the tuna balls on top.
