Groceries:
• 320 grams of spaghetti with beetroot (No. 13)
• 4 tablespoons extra virgin olive oil
• 100 grams shallot, finely chopped
• 4 cloves garlic, chopped
• 600 grams sliced mushrooms
• A tablespoon of fresh thyme leaves
• 3 tablespoons tomato paste
• 200 ml vegetable stock
• 80 grams walnuts
• 20 grams nutritional brewer's yeast
• A teaspoon of sea salt
• 4 tablespoons chopped parsley
How to prepare:
1. Cook the pasta according to package directions and save 150 ml of the cooking water.
2. Heat olive oil in a pan, fry shallots for 3–4 minutes, add garlic and cook for another minute.
3. Add the mushrooms and thyme and cook until softened and golden brown.
4. Add tomato paste and vegetable stock and bring to a gentle boil.
5. Grind walnuts with brewer's yeast, salt, and parsley to create a "vegan cheese powder.".
6. Mix ⅔ of the mixture with the pasta, gradually adding cooking water until a creamy sauce is obtained.
7. Season with black pepper and serve with the remaining ”powder.”.
