A recipe for a delicious and winning classic dish for the whole family: traditional hummus

A winning dish with dried or prepared chickpeas, combined with refined traditional tahini, served with cooked chickpeas on top, parsley and pine nuts – just like in restaurants. A winning dish, easy to prepare, suitable as a side dish or as a meal for the whole family.

Ingredients (for approximately 3-4 servings):
1 cup dried chickpeas
1/2 cup of traditional "Achva" tahini"
1 lemon, squeezed for juice
1 clove of garlic
1 teaspoon baking soda
1/2 teaspoon salt
2 liters of water
For garnish: a handful of chopped parsley, a tablespoon of olive oil and a handful of pine nuts

How to prepare:

  1. Rinse the cup of dried chickpeas thoroughly. Place in a bowl, add half a teaspoon of baking soda and cover with plenty of water. Soak for 10-12 hours at room temperature. Drain the water and rinse the grains thoroughly.
  2. Transfer the chickpeas to a pot with plenty of water and add 1/2 teaspoon of baking soda. Bring to a boil, skim off the foam that forms, reduce the heat and cook for about an hour and a half to two hours until the chickpeas are very soft. Set aside about a quarter cup of the cooking water and strain the rest.
  3. In a food processor, place: 2 cups cooked chickpeas, lemon juice, crushed garlic clove, and half a teaspoon of salt. Grind well until the texture becomes a paste. Add the half cup of raw tahini and continue grinding.
  4. Gradually add the reserved cooking water until you get a smooth, airy, and velvety texture. Taste and adjust the sourness, salt, or garlic to taste.
  5. Pour the hummus into a flat serving plate and garnish with whole cooked chickpeas, raw tahini drizzled on top, a tablespoon of high-quality olive oil, chopped parsley and pine nuts.
