To mark the opening of avocado season: a summery, colorful and delicious recipe for chicken and avocado tacos

On the occasion of the opening of the avocado season in Israel, 'Granot Farmers' - the largest avocado grower and marketer in Israel, is serving a festive, colorful and flavorful recipe - chicken and avocado tacos.

The dish combines freshly picked Israeli avocados with juicy chicken and fresh seasoning, inviting consumers to enjoy an easy, quick, colorful and healthy cooking experience that puts the avocado at the center of the plate.

Ingredients (for about 4 servings):

4 tortillas
2 avocados ready to eat from 'Granot Farmers''
1 cup corn kernels
6 cherry tomatoes, halved
1 cup black beans (cooked and drained)
2 pieces chicken breast
4 lettuce leaves
1 red/yellow pepper, diced
1/2 small purple onion, finely chopped
4 tablespoons olive oil
1 teaspoon sweet/hot paprika
A pinch of salt
A pinch of ground black pepper

To serve: lemon lime, jalapeño pepper

How to prepare:

  1. Preheat oven to 180 degrees.
  2. Arrange the tortillas in deep bowls, place in a baking dish and bake in the oven for about 10 minutes. Remove and cool.
  3. Mix olive oil, paprika, salt and black pepper in a large bowl. Add the chicken breasts and mix until coated. Sear the chicken well on a griddle pan for about 5 minutes on each side, until you get nice seared stripes on both sides. Cool and cut into cubes.
  4. Line each taco with a lettuce leaf, place chicken cubes, pepper cubes, avocado cubes, corn, chicken cubes, cherry tomato halves and red onion.
  5. Serve with a generous squeeze of lemon and lime and half-and-half on the side for spicy lovers.
