The perfect patty: a juicy burger with a sandwich made of almonds and horseradish aioli

Ingredients for a hamburger (5 servings):

1 kg minced entrecote
1 tablespoon fine salt
1 teaspoon ground black pepper

For an almond sandwich - (One bun):

One egg, size M or L
2 tablespoons water
A pinch of salt
A quarter cup of almond flour

For July you returned:

3 egg yolks
250 ml walnut oil
3 tablespoons grated horseradish
1 teaspoon lemon juice
salt
Black pepper

How to prepare:

Put the egg, salt, water, and almond flour in a bowl and mix until smooth and slightly viscous.

Choose a pan that is suitable for the oven, preferably a bowl with straight sides that will create a perfect bun shape. The diameter of the bowl is approximately 10 cm. Lightly grease the bottom and sides of the bowl and transfer the batter into the bowl.

Flatten the batter well and place in an oven preheated to 180 degrees for 5-10 minutes.

Prepare the horseradish aioli:

In a mixer or small round container (if desired, you can beat with a whisk), place the yolks and lemon and beat well. Add the oil in a very fine stream while mixing. When all the sauce has been absorbed into the yolks and is completely mayonnaise-like (not runny or broken), add the grated horseradish. (Can be kept in the refrigerator for up to two days.)

Prepare the burger:

Salt and pepper the minced meat, mix well and form into patties.

Grill the hamburger on a very hot plancha on both sides, depending on the desired degree of doneness.

To serve:

Cut the sandwich in half.

Sear in a pan on both sides. Spread the aioli on the bottom of the sandwich. Place the burger.

Place the fresh vegetables on top.

Place the second half of the sandwich and serve.
