
1 eggplant
1 potato
2 tomatoes
2 red peppers
1 onion
100 grams whole wheat flour
2 cloves of garlic
1 egg
500 ml water
50 grams grated mozzarella cheese
4 fresh leaves of purple or green basil
2 tablespoons olive oil
2 teaspoons salt
2 teaspoons pepper
1 teaspoon ground chili
1. Preheat oven to 250 degrees Celsius. Prepare a baking sheet with baking paper.
2. Clean all the vegetables thoroughly and place them in a baking dish - eggplant, red pepper and tomato. Place in the preheated oven for 40 minutes. Remove the dish from the oven, add onion and potato and return to the oven for another 10 minutes.
3. Remove the pan from the oven, let the vegetables cool slightly, and peel the skins off. Set the potatoes aside.
4. Place the eggplant, pepper, tomatoes, onion, and garlic in a food processor and blend until you get a smooth sauce.
5. Add olive oil, 1 teaspoon salt, 1 teaspoon pepper and a teaspoon of ground chili to the sauce.
6. Grate the roasted potatoes into a bowl.
7. Add flour, 1 teaspoon salt, 1 teaspoon pepper and beaten egg to a bowl and knead by hand into a smooth dough.
8. Cut the dough into four pieces. Roll each piece separately into a long "snake.".
9. Cut each gnocchi "snake" into 1 cm pieces. Let the pieces rest for at least one minute before cooking.
10. Boil water with salt in a pot. Add the gnocchi pieces and cook for 3 minutes, until the gnocchi float.
11. Place the cooked gnocchi on two serving plates, pour the sauce over them, sprinkle with grated mozzarella and garnish with basil leaves.
