
12 ripe, plump black figs
1/4 cup + 1 tablespoon honey
2-3 cups of soft mascarpone cheese (depending on the size of the serving you want to make)
1 tablespoon rum
Zest of one lemon
1. Cut the figs lengthwise and arrange them on a plate or tray.
2. Heat 1/4 cup honey in a small saucepan over medium heat. When the honey is hot and thin, reduce the heat. Be careful not to let the honey boil, but rather just warm it. Let the honey cook for about 2 minutes, then turn off the heat.
3. Quickly but carefully dip the fig halves into the hot honey, using a fork or small tongs.
4. Place the dipped fig halves back on the tray.
5. In a mixer bowl, place the mascarpone cheese and beat it with the remaining tablespoon of honey, the rum, and the lemon zest. Beat until the cheese is fluffy. Cover the bowl and place the cheese in the refrigerator.
6. Heat a grill pan (striped) to medium heat. When it is hot, arrange all the figs in it with the inside of the figs facing down. Once you have finished placing all the figs, start turning them over to the other side. The figs should only have slight burn marks. Turn off the heat, turn the figs over once more, and let them "sit" in the caramelized honey for a few more minutes. Remove the charred figs to a plate.
7. The roasted figs can be prepared an hour or more before serving time. Place them on a plate with their inner side facing up. On a weekday: Just before serving, you can microwave the fig plate for 30 seconds.
8. When the figs are warm and ready to serve, remove the mascarpone cream from the refrigerator and arrange the dish on a serving plate or in individual dessert plates. Place a generous amount of the mascarpone cream in the center and surround it with the roasted and caramelized figs. Serve while the figs are still warm.
9. The dish can be garnished with roasted sliced almonds.
