''Will Steal' the Show: A Recipe for Making No-Knead Bread with Dried Fruit

Components:

3 and 1/3 cups (500 grams) whole spelt flour
2 tablespoons natural maple syrup
1 tablespoon baking soda
1 teaspoon salt
3 tablespoons olive oil
1 cup toppings:
Walnuts/ almonds/ pine nuts/ pumpkin seeds/ raisins/ cranberries
1 and 1/2 soy milk
2 tablespoons apple cider vinegar

1. In a small bowl, mix milk and vinegar and set aside for 5 minutes.
2. Chop all the toppings into coarse pieces.
3. In a large bowl, mix flour, sugar, baking soda, salt and olive oil.
4. Add the milk and vinegar and mix just until a dough forms.
5. Add the toppings and mix just until distributed throughout the dough.
6. Transfer to an If You Care eco-friendly baking pan and make a gentle cut on top.
7. Bake for 30 to 40 minutes at 190 degrees until the bread is hard on all sides. Cut only after it has cooled completely.
