The ingredients:

4 proteins

A pinch of salt

50 grams of sugar

110 grams ground almonds

150 grams powdered sugar

Zest from half a lemon

Mascarpone cheese cup

Dried mint

Zest from half a lemon

How to prepare:

• In a bowl, beat the 4 egg whites with a little salt using a hand mixer.

• Add the sugar and continue to whisk until a smooth texture is obtained.

• In another bowl, mix the ground almonds and powdered sugar.

• Fold the resulting foam into the almond and sugar mixture until a homogeneous mixture is obtained.

• Add a little lemon zest.

• On a baking sheet lined with baking paper, pipe circles using a piping bag.

• Place in the oven at 150 degrees for 10 minutes.

Let's prepare the filling:

• Mix the mascarpone cheese with the dried mint and lemon zest to obtain a slightly sour filling.

• Remove the cookies from the oven and pour the filling over the center of 2 cookies to create a perfect macaron.
