
Components:
A package of cereal cracker pearls
1 ripe avocado
¼ cup goat cheese
Lemon juice
Salt and black pepper
Chili powder
olive oil
For the arugula pesto:
A package of washed and drained arugula
½ cup olive oil
¼ cup toasted pine nuts
¼ teaspoon salt
Ground black pepper
How to prepare:
In a blender bowl, grind the arugula, olive oil, pine nuts, salt and pepper until finely ground.
Pour into a jar and store in the refrigerator.
Mash the avocado in a bowl until smooth and season with lemon juice, salt and black pepper.
Spread the avocado puree on top of the crackers.
Drizzle a touch of arugula pesto over the avocado and crumble the goat cheese on top.
Drizzle a little olive oil and sprinkle with ground chili.
Spread your favorite flavor of cereal on cracker pearls and serve.
