Holiday dinner recipe: Meat stew with crispy rice with raisins and almonds

Ingredients:

2 kg meat (No. 4) cut into medium cubes

olive oil

A glass of dry red wine

10 onions

3 red peppers

3 tomatoes

2 carrots

3 cloves of garlic, crushed

2 thyme sprigs

1 tablespoon ground black pepper

2 tablespoons smoked paprika

salt

4 bay leaves

Allspice

Preparation method:

• Season the meat with black pepper, paprika, salt, bay leaves and allspice.

• Heat olive oil in a large pot and fry the meat on all sides until browned.

• Chop all the vegetables and add to the pot with the wine, spices, a little water and bring to a boil.

• Add the meat and vegetables and cook over low heat for about an hour.

• Serve hot

Raisin and almond rice:

2 cups water

½ teaspoon salt

1 cup rice

1 tablespoon oil

4-5 tablespoons of rice, raisin and almond mix from the Spice Route Farm

 How to prepare:

• In a small saucepan, bring water to a boil.

• Add salt, rice and oil and stir with a wooden spoon and return to a boil. Reduce heat, cover and cook for 15 minutes. Open the pot and check the condition of the liquids and the degree of softening.

• Add the raisin and almond mixture after cooking to taste. The desired dosage is 4-5 tablespoons of the mixture per cup.

Note: You can add before or after cooking, as you prefer. If you add at the beginning of cooking, the raisins and almonds will be soft, and if you add at the end of cooking, they will be crispy.
