Passover is upon us, it's time to start getting rid of all the leaven - and first and foremost the flour • Chef Pinchas Belshnikov presents a recipe for frikas - aka the fried bun, and a solution for those who shy away from deep frying

Materials:

1 kilo of flour
2 tablespoons dry yeast.
3 tablespoons of sugar.
A spoonful of salt.
A quarter cup of oil.
2 and 3/4 cups water.

• Sift the kilo of flour into a bowl.
• In a small bowl, place the yeast, sugar, and a quarter cup of warm water and mix well. After a few minutes, the yeast will activate and the ingredients in the bowl will begin to ferment.
• At this stage, pour the contents of the small bowl into the flour bowl and add half of the oil and all of the remaining water.
• Knead for a minute or two and only then add the salt and continue kneading for about 7 minutes.
• After kneading, take the remaining oil, apply to the dough and knead for another 3 minutes.
• Cover the dough with cling film and let it rise until it doubles in volume.
• After about an hour, when you see that the dough has risen well, oil your hands and knead again.
• Take the dough and divide it into balls of the desired size. Then roll each ball lengthwise.
• Place each piece of dough on a piece of cut, greased baking paper.
• Let the dough rise, covered with a towel, for 45-60 minutes - depending on how warm your kitchen is.
• After rising, heat oil for deep frying, over medium heat.
• If the oil is too hot, the dough will get a nice color, but the dough will remain inside. Therefore, make sure the oil is not too hot.
• Lift the dough with the baking paper, to maintain the shape of the bun, and gently throw it into the oil, until browned on both sides.
• The rolls should not be sliced ​​immediately. It is better to let them rest for another 10 minutes before unwrapping and filling.

If you don't want to deep fry: You can place the rolls on a baking sheet, brush with egg, and place in an oven preheated to 180 degrees, until browned.

The roll can be filled with an endless number of things imaginable: tuna, boiled potato, vegetable salad, hard-boiled egg, hash browns, and much more.

tip:

• If the oil was too hot and the rolls were not baked inside, you can put them in the oven for a few more minutes to complete baking.
• Alternatively, instead of placing a towel on the rolls while they rise, you can replace them with pieces of baking paper, cut and greased, and place on top.
