
On hot summer days, when you don't feel like turning on the oven or spending a lot of time in the kitchen, there is a recipe for making cold cucumber rolls filled with tuna, from the Rio Mara tuna brand.
The roll combines the natural crispness of fresh cucumber with a rich tuna filling with a touch of olive oil and refreshing yogurt.
A perfect dish for entertaining or a family summer dinner. It can be served as a starter or as a light and healthy snack, and all this takes just a few minutes to prepare.
Components:
– 3 cans of Rio Mare tuna in olive oil (80 grams each)
– 100 grams of Greek yogurt
– 2 cucumbers
– Extra virgin olive oil
– Salt and pepper to taste
How to prepare:
1. Slice the cucumbers into thin strips using a mandolin or peeler. Sprinkle with a little salt and set aside to drain, then dry well.
2. Drain the tuna and crumble it into a bowl.
3. Spread a thin layer of yogurt on each cucumber strip, add tuna and roll into a tight roll.
4. Secure with a toothpick, season with salt, pepper and a drizzle of olive oil.
5. Serve immediately – and enjoy it in a particularly summery and refreshing way.
Serving suggestion: You can also add chopped herbs such as mint or chives to the roll, or add lemon zest for an even fresher texture.
