
Ingredients: (5-6 diners)
10 lamb ribs
2 tablespoons dried mint
1 cup olive oil
10 garlic cloves
3 sprigs of oregano
10 figs
2 tablespoons pomegranate seeds
6 zucchini
Salt and pepper to taste
Preparation instructions:
• Heat olive oil in a pan and once the pan is hot, add the garlic and oregano with the mint.
• Mix the oil with the garlic and oregano and spread well on the ribs.
• Grill the ribs on a hot pan until fully browned on each side.
• In another pan, roast the figs and chopped zucchini at the same time.
• When the ribs are ready, arrange the figs and zucchini on top and pour the remaining oil and garlic sauce with the oregano, sprinkle with the pomegranate seeds and squeeze a little lemon to taste.
