
1 package (500 grams) Barilla "Parfait" pasta
1 bag of baby spinach leaves
1 Granny Smith apple (green and sour)
1 red onion
A handful of mint leaves
1 cup pomegranate seeds
100 grams toasted almond chips (on a dry pan)
For the sauce:
1/3 cup olive oil
2 tablespoons white wine vinegar or apple cider vinegar
1 tablespoon honey
1 tablespoon toasted sesame seeds
Salt and pepper
• Cook the pasta according to the instructions on the package. Drain and cool. It is recommended to add a little olive oil to the hot pasta to prevent sticking.
• Cut the apple into quarters, remove the seeds and cut into thin slices. Cut the red onion in half and slice into thin rings.
• Prepare the sauce: Place all ingredients together in a closed container or jar and shake until the ingredients are combined.
• Assemble the salad: In a large bowl, mix pasta, spinach, mint, apples, and onion. Pour in the dressing and mix well.
• Before serving, sprinkle the pomegranate seeds and roasted almonds on top – and serve.
