Yankel Litzman against donuts with jam? So go for a hot, hot sponge cake

Ingredients (about 60 medium pieces or 40 large pieces):

1 kg flour
10 grams of salt
130 grams sugar
50 grams dry yeast (or 150 grams fresh yeast)
800 ml lukewarm water

1. Mix all ingredients in a bowl by hand. The dough will be quite thin.
2. Allow to rise in a bowl, cover with cling film.
3. When the dough has risen, give it a few punches to remove the air, cover and let rise a second time.
4. Prepare a pot with deep oil.
5. Prepare a bowl of oil on the side and working with oiled hands, take pieces of dough the size of half a fist, make a hole in them, and carefully place in the oil. (Be careful not to drip water into the oil!)
6. When one side is golden, turn over.
7. The frying itself doesn't take long, about a minute and a half on each side. Make sure the oil is hot but not boiling.

• Sprinkle sugar or powdered sugar on top and eat hot.
