In my first column, I invite readers to 'visit', literally, one of the wineries with me.<\/p>\r\n
Every winemaker wants to produce fine wine, just as a CEO strives for his factory to achieve good results. But for this, appropriate means are needed, which will drive the necessary steps.<\/p>\r\n
As true as this law is everywhere, it is doubly true in the wine industry. Many sensitive and delicate things pass through it, until we see the finished product on the Shabbat, holiday, and festive table.<\/p>\r\n
First of all, you need good grapes. This is the basis for the success of the wine. From now on, the winemaker's work is focused on removing obstacles in the process of turning grapes into wine, and this is a long job that requires a great deal of caution and overcoming obstacles.<\/p>\r\n
This requires knowledge and professionalism, but above all, dedication and love. A dedicated winemaker sleeps during the fermentation season in the winery, among the wine barrels.<\/p>\r\n
We haven't yet told another important and fundamental professional secret: "Money. Lots of money.".<\/p>\r\n
Cheap equipment will produce cheap wine.<\/p>\r\n
The Master of Wine<\/b><\/p>\r\n
The Tsera Winery, located in Kibbutz Tsora, honorably and successfully fulfills all the necessary components to produce the 'The wine<\/b>'.<\/p>\r\n
Naturally, every winery owner considers whether to invest and how much to invest, because ultimately he wants to avoid finding a negative balance.<\/p>\r\n
We said "every winery," but no, at 'Zeraa'. The consideration is purely professional.<\/p>\r\n
Although Tzora Winery does not give away free wine, it is willing to invest everything necessary in it, even if it is more expensive than can be demanded.<\/p>\r\n
This is thanks to the owner, a Jewish businessman from the United States, who loves Israel and wine, and especially the winning combination: "Israeli wine.".<\/p>\r\n
He first entered as a fifty percent partner, and in 2008 he bought the winery in its entirety. Since then, only professionalism and love for wine have operated there.<\/p>\r\n
This area is overseen by Eran Pick, a young and affable winemaker who, in addition to the title of 'winemaker', is also on his way to receiving the title of Master of Wine.<\/p>\r\n
He will probably be the first winemaker in Israel to hold this title, when in the entire world there are not even five hundred professionals who have passed these studies and exams. Besides the knowledge, he also loves the profession. It is in his soul.<\/p>\r\n
The winery was founded by the late farmer Ronnie James in 1993. His knowledge of winemaking was not extensive, but James understood that good wine begins with a well-tended and invested vineyard, and not with accepting unidentified grapes into the winery. He passed this on to many, and today this method has been adopted by many wineries.<\/p>\r\n
James, a professional farmer, began to study the subject of vineyards, and as a winemaker, he realized that the quality of the vineyard is more important than the grape variety from which the wine is made.<\/p>\r\n
Adopting the method, he named his wines after the vineyards: "Giv'at Halukumim" and "Shoresh".<\/p>\r\n
The party and the Sabbath<\/b><\/p>\r\n
From the 2002 vintage, James decided to produce kosher wines. To this end, he joined the local rabbinate, and according to its instructions, he fenced off the winery and locked it "seal within seal," with the key entrusted solely to the overseer.<\/p>\r\n
A few Saturdays later, the electricity went out in the area around the winery, with the main power supply located inside the winery, and there was an important party outside.<\/p>\r\n
The kibbutz members wanted to enter, as they had always done, the winery to turn on the light switch, but the door was of course locked. When they tried to break it down, James arrived and said firmly: "It's impossible to enter the winery!" He stayed behind to make sure no one entered. The party remained in the dark.<\/p>\r\n
The winery produces six types of wines:<\/p>\r\n
\""Judean Mountains" white\/red from vineyards in the Judean Mountains area.<\/p>\r\n
\"White\/red "Shoresh" from several plots in the Shoresh vineyard, located near the settlement of Shoresh.<\/p>\r\n
\""Misty Hills" distributes fossils in Kerem Shoresh.<\/p>\r\n
\""Or" is also from a root vineyard, from the highest plot in the vineyard.<\/p>\r\n
1. Hari Yehuda White - made from 86% Chardonnay and 14% Sauvignon Blanc that were fermented and aged with the yeast (sur-lie), in barrels and stainless steel tanks for about nine months. The aging gives the wine a slightly heavy flavor, with vanilla from the Chardonnay and a special and very noticeable acidity from the Sauvignon Blanc. 99 NIS<\/p>\r\n
2. Hari Yehuda Red \u2013 A blend of Cabernet, Merlot and Syrah, aged for 12 months in French oak barrels. This wine is easy to drink, relatively light compared to Shoresh and Misty Hills, it is smooth, velvety and fruity with good barrel flavors. 95 NIS<\/p>\r\n
3. White Root - Made from 100% 'Sauvignon Blanc', the wine was aged in French oak barrels for about seven months. The aging in the barrel gives it depth and a complex body, which on the one hand maintains freshness and on the other hand also has volume that fills the mouth. 130 NIS<\/p>\r\n
4. Red Root - A blend of mostly Cabernet, about a third Syrah, and a little Merlot. The wine was aged for about 16 months in French oak barrels (very similar to the classic Bordeaux blend). The depth of the wine gives it some barrel and tobacco flavors, but it is also wonderfully balanced with some delicate tannins on the finish. 130 NIS<\/p>\r\n
5. Misty Hills \u2013 'Cabernet' and 'Syrah' aged for 18 months in barrels, of which a little more than fifty percent belong to Cabernet Sauvignon and the rest to Syrah. The balance of both and the delicate touch of the barrel creates a taste of elegant red and black fruits, with a good and long sour finish. The wine is well made, and it is very worth stirring it in a glass before drinking. 210 NIS (worth the price for those who understand)<\/p>\r\n
6. 'Or' \u2013 A dessert wine made from Gew\u00fcrztraminer grapes grown in a root vineyard. Produced in the Ice wine style. This method began in Germany about 200 years ago, where the clusters were frozen at night during the harvest season, and farmers discovered that the frozen pressing imparts a refined sweetness to the wine. The wine is very concentrated with flavors of honey and pineapple and other tropical fruits, and leaves a long finish in the mouth. It is sold only at the winery's visitor center. Its price is 120 NIS for a 375 ml bottle.<\/p>\r\n
You can't ask for recommendations on "which is better," because it's a matter of personal taste. You just have to taste it slowly, smell it, roll it in your mouth, and decide.<\/p>\r\n
