By virtue of my position, I travel to wine exhibitions that take place from time to time, where I meet many good wineries. With God's help, during my regular tours, I will reach all the best and most interesting of them.<\/p>\r\n

At most exhibitions, there is a constant problem: many of the bottles are open, and visitors who do not observe Shabbat taste and pour for themselves, so that I, as a person who observes Torah and mitzvot, can no longer taste after them.<\/p>\r\n

However, I managed to find a solution: When I see something worth tasting, I wait patiently for the bottle to finish, and "get" to open a new bottle, taste it, and be convinced or disappointed.<\/p>\r\n

None of this happens in Recanati's position.<\/p>\r\n

The wine servers there know that when I arrive, they need to open a new bottle.<\/p>\r\n

But there is something else they know, and I will reveal it to you here and now.<\/p>\r\n

The professionals know that at a prestigious exhibition, each winery invests many bottles for the many popular and curious tasters, who don't ask for more than a sip of half a glass of wine and 'go.' Therefore, on the tasting table that each winery presents, the simpler wines from the mid-range series are presented, and these are what the masses get to taste.<\/p>\r\n

But there are surprises that even the curious layman should know about. Every now and then - at the discretion of the person in charge at the stand, a bottle from a higher series is opened - either because a special hour has arrived, or because an important figure has appeared at the winery's stand.<\/p>\r\n

The wine servers at Recanati's exhibitions somehow mark me as an important person, and every time I approach their booth, even if there are several open bottles, they are honored to go to the hiding place, where the bottles from the high series are hidden, and bring out something prestigious in my honor.<\/p>\r\n

Low blood sugar level<\/b><\/p>\r\n

But let's not rush the process.<\/p>\r\n

Here's the beginning: In 2000, Lenny Recanati decided with several partners to open a winery.<\/p>\r\n

The winery has gone through many changes, but that's not the topic for now. What is interesting is that today, winemaker Gil Shatzberg and his right-hand man, winemaker Ido Levinson, who are in charge of making the wine, do it not only excellently, but also a little differently than most wineries in the country. How? By harvesting early, which results in a slightly lower sugar level.<\/p>\r\n

How are we supposed to know whether this is a virtue or a defect?<\/p>\r\n

Let's get a little lesson, and it seems we do know!<\/p>\r\n

Yeast is responsible for converting sugar into alcohol. The higher the sugar, the higher the alcohol level, and anyway, when the sugar is low, the alcohol is also slightly low, and here we have an excellent wine that you can drink another glass of without a twinge of conscience, or four glasses on Seder night and feel great.<\/p>\r\n

Early harvest also causes slightly high acidity, because when the sun beats down on the vine and ripens the grapes, the acidity level drops and early harvest causes high acidity.<\/p>\r\n

Who needs this? And for what?<\/p>\r\n

It turns out that the winery knows a few more things. Acidity helps with fine aging and preserving the wine for years.<\/p>\r\n

The acidic and delicate wine at Recanati Winery is reminiscent of the original French style \u2013 as it is in Burgundy\/Bourgonne and Bordeaux, France's wine country, where the grapes are harvested with a high level of acidity, due to the lack of sun and the frequent coolness during the harvest season.<\/p>\r\n

\"\u05d9\u05d9\u05df\"<\/a><\/p>\r\n

When do you drink wine on the balcony?<\/b><\/p>\r\n

The grapes for the Recanati Winery come mainly from the Upper Galilee, from Manara and the Ben Zimra vineyard, but not only from there. Recanati has vineyards in both the Lower Galilee and the Judean Mountains, and everywhere the type of grape typical of that region grows.<\/p>\r\n

One of them is the "Gavial" vineyard, a husband's vineyard that is also a wild vineyard.<\/p>\r\n

Unlike regular vineyards where the vines are trained on posts and trellises, in this vineyard the grapes grow on a "cup" shaped bush that is attached to the ground. There is no irrigation in this vineyard, and the Carignan grapes grow there completely naturally.<\/p>\r\n

Part of their winemaking decision in the high series is to create premium wines in a single vineyard, thus focusing on a successful variety and an area (terroir) that is specifically suited to this variety.<\/p>\r\n

The flagship Special Reserve red wine is not produced every year, but only when the conditions and grapes ripen to the winemakers' liking.<\/p>\r\n

Now that winter is here, the rain is pounding on the windows, there is no longer any room for white and ros\u00e9 wines, which are drunk chilled to a temperature of about 8 degrees. These wines are suitable for drinking on a sunny terrace outside or on other similar occasions.<\/p>\r\n

What do we do? Steal?<\/b><\/p>\r\n

But Recanati's bright ros\u00e9-red demands attention and I must write a few words.<\/p>\r\n

\u00a0It is made from Barbara grapes and has flavors of strawberries and peaches. Excellent acidity is recommended (in the summer, of course).<\/p>\r\n

\u00a0Now is the time and place to return to the wine I wrote about at the beginning. When I arrive at Recanati's stand at the exhibition, some kind of wine is opened in my honor, which one?<\/p>\r\n

\u00a0\""Carinian"!<\/p>\r\n

\u00a0Carignan from the "Gift" Wild Vineyard in the Judean Mountains<\/p>\r\n

\u00a0In my opinion, one of the finest wines we have in Israel. A total of about seven thousand numbered bottles are bottled, which run out long before the new vintage.<\/p>\r\n

\u00a0On my last visit to the winery, there wasn't even a bottle left for tasting.<\/p>\r\n

\u00a0But that doesn't mean you have to give up, what do you do? Steal! How? Take a taste of a young wine that is still in the barrel, it has strong aromas, flavors of plums and chocolate, strong tannins but a unique wine.<\/p>\r\n

\u00a0Because it is said: "And you shall be avenged of the Lord and of Israel," I must apologize for saying "thieves," for the vessel for drawing a little wine from the barrel is called a "thief"!<\/p>\r\n

\u00a0Last but not least is Marselan, a fairly new variety in our country. A cross between Cabernet Sauvignon and Grenache, a successful combination of the delicacy and nobility of Cabernet with the wildness of Grenache.<\/p>\r\n

\u00a0\u00a0We also tasted it from the barrel, and it does indeed contain a lot of aroma, taste and smell of fresh, sweet mud and the smell of tropical fruits, especially passion fruit. A promising wine.<\/p>\r\n
