From Italian cuisine: A recipe for summer pasta with pesto and tuna

There's nothing like making a light, quick, refreshing, and comforting summer meal that will make you feel like you're in an Italian restaurant without leaving home. This is a flavorful dish that's perfect for any meal: a recipe for pasta with pesto and tuna. Courtesy of the Rio Mare brand.

The recipe combines tuna, which provides a boost of protein and a celebration of flavors.

Components:

– 3 cans of Rio Mare tuna in olive oil (80 grams each)
– 350 grams of short pasta (such as penne or farfalle)
– 200 grams mozzarella
– 1 tomato
– 50 grams of extra virgin olive oil
– 2 handfuls of basil leaves
– 1 tablespoon pine nuts
– 30 grams of Parmesan
– 1 tablespoon soft cheese (mascarpone or cream cheese)
– Salt to taste

How to prepare:

1. Cook the pasta in salted water until al dente.
2. Meanwhile, prepare the pesto: grind the basil leaves with olive oil, Parmesan, pine nuts, and soft cheese until you get a smooth, rich sauce.
3. Cut the mozzarella and tomato into cubes, mix with the strained tuna.
4. Drain the pasta, mix with the pesto and add the tuna, tomato and mozzarella mixture.
5. Serve immediately – and feel like you're in Italy.

Upgrade tip: Serve with fresh basil leaves, a sprinkle of grated Parmesan, and a little ground black pepper – and that's all it takes to turn a routine summer evening into Italian-style entertaining.
