Perfect Salmon 'Herring' / Hezki Crispel
Homemade pickled salmon (see recipe), cut into small cubes
Add diced hot pepper/chili, mushrooms, red, white, and green onions,
Chopped greens: cilantro, parsley, celery, a little lemon zest and oil in an amount half the height.
Here is the recipe:
Pickled Salmon (Grablex) / Crispy Crisp
1 skinless salmon fillet
Salt and sugar mixed in an amount sufficient to cover the fish, ground black pepper
Optional - coriander seeds, mustard seeds, green onions (or other greens to taste).
How to prepare:
• Cover the fish with the sugar, salt and ground black pepper mixture. If desired, add the coriander/mustard/green onion before mixing.
• Cover the fish with plastic wrap and leave in the refrigerator to marinate for at least 12 hours.
• The longer the fish is captured, the more

• Cut like ceviche or into cubes

White Matias (White Herring) in Mayonnaise and Sugar / Hezki Crispel
10 units of white herring (Matias)
• Filter from the oil
• Cut into beautiful cubes
• Add: chopped green onions, lots of sugar, 2 tablespoons mayonnaise
• You can add a little rich cream or dairy cream (depending on custom)
• Mix the sauce ingredients well and add the fish.
• Soak together for at least a day

'Herring' with mayonnaise and mustard/ Chef Israel Kreuzer
10 pieces of red/pink herring fillets from delicatessens, sliced into 1 cm thick slices
• Mix in a bowl with -
1 teaspoon mustard, 1 teaspoon Dijon mustard (optional)
1-2 tablespoons mayonnaise
A pinch of black pepper
1-2 tablespoons white sugar
You can add 1 medium onion, sliced into half rings.
• Soak together in the refrigerator for at least a day.

Classic Kiddush 'Herring' / Chef Israel Kreuzer
10 pieces of red/pink herring fillets purchased at delicatessens, sliced into 1 cm thick slices
2 large onions cut into small cubes
Options for addition: a few slices of hot pepper/ a few black peppercorns/ four-season pepper/ 3 sprigs of chopped green onion
• Arrange the herring with the onion and toppings in a storage box and add oil until covered.
• Soak for at least a day in the refrigerator.

'Herring' with vegetables / Hezki Crispel
10 pieces of red/pink herring fillets pickled in oil (bought at delicatessens)
Strain from the oil and cut into nice cubes.
Add diced white, red, green onions, bell pepper and chili pepper.
Option: lemon zest, celery leaves, coriander, parsley
Can I have a little garlic?
Add regular oil to cover the mixture and soak together for at least a day.
