Easy recipe to prepare for a holiday dinner: Roasted chicken with root vegetables

Ingredients:

30 g olive oil

salt

4 crushed garlic cloves

1 onion

A bunch of carrots (peeled and chopped)

1 leek, washed and diced

700-800 g potatoes, quartered

4 chicken thighs

Fresh thyme

How to prepare:

• Preheat oven to 200 degrees.

• In a pan, add olive oil, salt, crushed garlic and onion.

• Cut the potatoes into cubes and sprinkle over the pan.

• Add the carrots, leeks, potatoes and thyme to the pan and mix.

• Add the chicken thighs after removing the skin, skin side down.

• Bake for 45 minutes with the cover on, remove and continue at 190 degrees.

• Remove from the oven and set aside.
